Brinjals (big) : 2
Chickpea flour (besan): 100 grams or 1 ½ teacups
Red Chili Powder: 1 teaspoon
Turmeric powder: 1/4th teaspoon
Salt: 1 teaspoon+ ½ teaspoon
Ginger garlic paste: 1 teaspoon
Cooking soda: 2 pinches
Chopped coriander: handful
Whole green chilies: 2 diced
Oil for frying
- Make 5mm thick round slices of brinjals. Add 2 cups of water and 1 teaspoon salt to these slices, mix well and Keep them aside.
- In an empty bowl add chickpea flour or besan, ½ teaspoon salt, red chili powder, turmeric powder, ginger garlic paste, cooking soda, chopped coriander and diced green chillies and 1 teacup or 130 ml of water. Mix well and leave this batter for about 15 minutes.
- After 15 minutes, add oil for frying and when the oil is hot, dip the brinjal slices into the batter and give it a fine coating on both sides. Shed the excess batter and lower these coated brinjal slices into the oil.
- Fry on both sides till they turn brown.
Baigan Ke Bhajiye or Brinjal Fritters are ready.
