Brinjals (big) : 2

Chickpea flour (besan): 100 grams or 1 ½ teacups

Red Chili Powder: 1 teaspoon

Turmeric powder: 1/4th teaspoon

Salt: 1 teaspoon+ ½ teaspoon

Ginger garlic paste: 1 teaspoon

Cooking soda: 2 pinches

Chopped coriander: handful

Whole green chilies: 2 diced

Oil for frying



  1. Make 5mm thick round slices of brinjals. Add 2 cups of water and 1 teaspoon salt to these slices, mix well and Keep them aside.
  1. In an empty bowl add chickpea flour or besan, ½ teaspoon salt, red chili powder, turmeric powder, ginger garlic paste, cooking soda, chopped coriander and diced green chillies and 1 teacup or 130 ml of water. Mix well and leave this batter for about 15 minutes.
  1. After 15 minutes, add oil for frying and when the oil is hot, dip the brinjal slices into the batter and give it a fine coating on both sides. Shed the excess batter and lower these coated brinjal slices into the oil.
  1. Fry on both sides till they turn brown.


Baigan Ke Bhajiye or Brinjal Fritters are ready.
