Chilli Chicken Wet – Maimoona Yasmeen Recipes – Hyderabadwala

For  4 to 5 servings

For chicken marination and frying:
Chicken boneless: 200 grams
Ginger garlic paste: ½ teaspoon
Salt: ½ teaspoon
White pepper: ½ teaspoon
Ajinomoto: 2 pinches
Cornflour: 1 tablespoon
All purpose flour (maida): 1 ½ tablespoon
An egg white
Oil for semi- frying

1.    Make small pieces of chicken. Wash and drain the water.

2.    Add ginger garlic paste,  salt, white pepper, ajinomoto, cornflour, all purpose flour or maida and egg white.

3.    Mix well and keep this aside for marination for about half an hour.

4.    In a frying pan, add oil for semi frying the chicken pieces.

5.    When the oil is hot, lower these marinated chicken pieces into the oil and close the lid.

6.    Semi fry on both sides while keeping the lid closed till they turn tender and light brown.

7.    Separate the stuck chicken pieces and keep the fried chicken pieces aside.

Preparation of gravy:

Semi fried chicken pieces
Oil: 1 tablespoon
Onions: 2 whole
Capsicum: 1 whole
Diced ginger: 1 teaspoon
Diced garlic: 1 teaspoon
Soya sauce: 1 tablespoon
Green chilli sauce: 1 tablespoon
Vinegar: 1 tablespoon
Salt: 1 teaspoon
Water: 300 ml + 1/4th tea cup
Whole green chillies: 2
White pepper powder: ½ teaspoon
Cornflour: 1 tablespoon
Chopped coriander: a handful
Green spring onions: a handful


1.    Leave only 1 tablespoon of oil in the pan and remove the excess oil.

2.    Add cubes of onions, diced ginger, diced garlic.

3.    Sauté for 15 seconds and add cubes of capsicum.

4.    Add soya sauce, green chilli sauce, vinegar, 300 ml water, salt and close the lid.

5.    Cook on medium flame for about 2 minutes and add whole green chillies slit vertically and de-seeded.

6.    Add white pepper powder, fried chicken pieces and add 1 tablespoon cornflour mixed in 1/4th tea cup of water.

7.     Mix well and close the lid. Cook on low flame for about 2 minutes.

8.    Garnish with chopped coriander and chopped green spring onions.
Chilli Chicken Wet is ready.
