Gobi manchurian or Cauliflower Manchurian – Maimoona Yasmeen Recipes – Hyderabadwala

For marination and frying:

 

Ingredients:

Florets of cauliflower: 150 grams

Cornflour: 2 tablespoons

All purpose flour (maida) : 1 tablespoon

Ginger garlic paste: 1 teaspoon

Red chili powder: ½ teaspoon

Salt: 1 teaspoon

Ajinomoto: 2 pinches

Soya sauce: 1 tablespoon

One egg white

Oil for frying

 

Procedure:

  1. In a cooking pan, add 400 milli litres of water, 1 teaspoon of salt. When the water comes to boil, add 150 grams of florets of cauliflower. Cook for 1 minute and transfer the florets into a bowl.
  2. Add corn flour, all purpose flour or maida, ginger garlic paste, red chili powder, salt, ajinomoto, soya sauce and  an egg white to the boiled florets. Mix well and keep it aside.
  3. In  frying pan, add oil for frying. When the oil is hot,  lower the batter with a wide mouthed spoon into the oil. Seprate the coated florets if they stick to each other. Fry on both sides till they turn brown. Keep these fried florets aside.

 

Final preparation:

 

Ingredients:

 

Oil: 2 tablespoons

White spring onions: 1 tablespoon

Diced garlic: 1 tablespoon

Diced ginger: 1 tablespoon

Green chili: 1 diced

Green capsicum: 1 whole

Soya sauce: 1 tablespoon

Tomato sauce: 1 tablespoon

Red chili sauce: 1 tablespoon

Red chili powder: ½ teaspoon

Salt: ½ teaspoon

Sugar: 1/4th teaspoon

Cornflour: 1 tablespoon

Red food colour: 2 pinches

Green spring onions: ½ cup chopped

Chopped coriander: a handful

Fried florets of cauli flower

 

Procedure:

 

  1. Remove the excess oil from the pan and leave only 2 tablespoons of oil in the pan.
  2. Add  chopped white spring onions, diced garlic cloves, diced ginger, diced green chili, ½ cup of water and medium sized pieces of capsicum. Cook for one minute.
  3. Add  soya sauce, tomato sauce, red chili sauce, red chili powder, salt, sugar, add 1 tablespoon cornflour mixed in ½ cup of water, red food colour, chopped green spring onions, chopped coriander, ½ teacup of water and fried florets of cauliflower.  Mix well and switch off the flame.

Gobi manchurian or cauliflower manchurian is ready.
