Hyderabadi Bagara Khana from Maimoona Yasmeen’s Recipes

 

Ingredients: (5-6 servings)

 

1. Rice – 8 cups(approximately 1 kg)
2. Cooking oil- 4 tablespoons
3. Chopped Onion(Medium Size) – 1
4. Ginger Garlic Paste – 1 ½ tablespoon
5. Salt – 3 teaspoons
6. Caraway seeds (Shahzeera) – 1 teaspoon
7. Cinnamon(Dalhini) – 2 small sticks
8. Cloves – 2
9. Mint Leaves – half bunch
10. Coriander – ½ bunch chopped
11. Whole Green Chillies – 4 to 5
12. Water – 5 big glasses (3 litres)

 

Procedure:

 

1. In a cooking saucepan, add cooking oil and when the oil is hot, add chopped onion.
2. Stir till the onions turn brown.
3. Add ginger garlic paste, salt, caraway seeds, cinnamon, cloves and 5 glasses of water, add mint leaves, chopped coriander, whole green chillies and close the lid.
4. When the water comes to boil, add rice, stir and close the lid.
5. Stir in between. Cook on high flame till the water gets dry, for approximately 15 minutes, simmer for 10 min.

 

Baghara Khana is ready to be served.
