Hyderabadi Sutriyan (Mutton) – Maimoona Yasmeen Recipes – Hyderabadwala

Ingredients: For 4 servings

 

Boneless mutton pieces : 250 grams

Tomatoes : 2 chopped

Onion: 1 chopped

Ginger garlic paste: 1 tablespoon

Red Chilli powder: 2 teaspoons

Salt: 1 teaspoon+ 1 ½ teaspoon

Turmeric powder: ½ teaspoon

Whipped Curd: ½ tea cup

Water: ½ tea cup + 500 ml

Cooking Oil: 2 tablespoons

Flat bread or Phulkas (fresh or left over) : 5 whole

Spices or garam masala powder: ½ teaspoon

Chopped mint leaves: ½ tea cup

Chopped coriander: ½ tea cup

Whole green chillies: 4

 

Procedure:

 

  1. In a pressure cooker, add boneless mutton pieces, chopped tomatoes, chopped onion, ginger garlic paste, red chilli powder, 1 teaspoon salt, turmeric powder, whipped curd, ½ cup of water and oil. Mix well, close the lid and pressure cook till 4 to 5 whistles.
  1. Meanwhile take 5 left over or fresh phulkas or flat bread semi cooked on both sides.
  1. Tear the phulkas into small pieces. Keep them aside.
  1. Open the pressure cooker after 5 whistles or till the mutton gets tender.
  1. Stir till the water dries up completely or till the oil separates.
  1. Add 500 ml of water, spices or garam masala powder, chopped mint leaves, chopped coriander , whole green chillies and 1 ½ teaspoons salt.
  1. Close the lid and when the water comes to boil, add torn pieces of phulkas or bread.
  1. Mix well and close the lid. Cook on medium flame for about 10 minutes.

 

Hyderabadi Sutriyan is ready.
