Mutton Nihari Restaurant Style – Maimoona Yasmeen Recipes – Hyderabadwala

Mutton with bones (big pieces) : 500 grams

Ginger Garlic pate: 1 ½ tablespoon

Turmeric powder : 1 teaspoon

Red Chilli Powder : 2 teaspoons

Salt : 2 teaspoons

Mint leaves (chopped) : 1 bunch + 1 bunch

Coriander (chopped) : 1 bunch + 1 bunch

Curd : 1 cup

Onions (chopped and fried to crispy) : 3 big

Bay leaves : 2 -4

Fennel seeds powder : 1 tablespoon

Cumin powder : 1 tablespoon

Coriander powder : 1 tablespoon

Spices (Garam masala powder) : 1 teaspoon

Cooking oil : 4 tablespoons

Wheat flour : 1 cup

Black pepper powder : 1 teaspoon




  1. In a cooking saucepan, add oil. When the oil is hot, add bay leaves and ginger garlic paste.
  2. Stir till the paste turns brown. Add mutton pieces. Semi fry for 10 minutes.
  3. Add turmeric powder, curd, salt, one chopped and fried onion, red chilli powder, black pepper powder, 1 bunch mint leaves(chopped)  and 1 bunch chopped coriander.
  4. Add 1 ½ litres of water and cook on high flame for 5 minutes till it comes to boil then simmer for an hour till the mutton gets tender. If you are using a pressure cooker, cook for 20 minutes on low flame.
  5. Add roasted wheat flour, cumin powder, coriander powder, fennel seeds powder, spices and 6 whole green chillies.
  6. Simmer for 10 minutes.
  7. Garnish with the remaining fried and crispy onions, chopped mint leaves and chopped coriander.


Restaurant Style Mutton Nihari is ready. Serve with chapatis or naan ki roti.
